Rửa sạch tôm sú, bóc vỏ, bỏ đầu chẻ sống lưng lấy chỉ đen, giữ đuôi. Ngò rí làm sạch, xắt nhỏ. Tôm cho món này nên chọn tôm tươi, kích thước lớn, đầu tôm còn dính chặt thân, vỏ tôm trong, sáng màu. Tiếp đến chuẩn bị 3 chén khác nhau: 1 chén bột mì và muối vào trộn đều. 1 chén cho lòng trắng trứng vào đánh nhẹ, đều. 1 chén khác trộn bột chiên xù và tiêu vào.
Làm nóng lò ở 200 độ C, sau đó đổ dầu olive vào khay nướng. Lần lượt nhúng tôm vào bột mì, lòng trắng trứng và cuối cùng là bột chiên xù. Làm lần lượt cho đến hết rồi cho tôm vào khay nướng, đặt vào lò nướng trong 7 phút sau đó lấy ra trở mặt tôm, nướng thêm 5-6 phút nữa cho đến khi phủ màu vàng nâu.
Tắt lò, cho tôm ra đĩa và thưởng thức. Thay vì chiên, bạn có thể làm cách này để tôm không ngập trong dầu mỡ. Cách “chiên” đặc biệt này sẽ giúp giảm bớt lượng chất béo không cần thiết đấy.
